Abstract Taking single-harvested cultivar‘Jiangshujiao’and double-harvested cultivar‘Fenghongzao’as experiment materials,this paper studies the effects of organic fertilizer and inorganic fertilizer on the dietary fiber(DF)and its main components in edible part of the gall of different sizes.Results showed that the contents of total dietary fiber(TDF)and its soluble dietary fiber(SDF)in edible part of the gall were rather high.Cellulose and semi-cellulose all have higher proportion than lignin and pectin observably in DF components.When organic fertilizer was used,the contents of SDF increased,while variation ranges of TDF decreased within the gall of different sizes,the contents and their variation of DF main components presented difference due to different cultivars.It is considered that the gall of Zizania latifolia is a kind of rich and high quality DF food.It can also stabilize the DF content of the gall and improve its quality when organic fertilizer was used.
