Abstract The nutrients, mineral elements and amino acid in bamboo shoots of Chimonobambusa hejiangensis, Ch. utilis and Ch. angustifolia were analyzed. The results showed that the bamboo shoot quality of Ch. hejiangensis and Ch. utilis were similar, but better than that of Ch. angustifolia. The bamboo shoots of Ch. hejiangensis collected from different altitudes and times during the shooting period had little changes in the nutritional status. So it could be more planted in the range of suitable altitudes.
